Had Hake in a Parcel on Wednesday night. Yes, ok, I know it was a wild, wet night but bought the fish fresh from my local fishmongers Morgans and just had to have it on the BBQ.
So i wrapped them in tin foil. Parley from the garden, dollop of tomato puree, olive oil, crushed garlic, pepper and lemon rind. The fish steams in the parcel in all the herbs while cooking. Had them on the BBQ and for the last minute opened it to get more of the lovely wood flavor of the fire. Made a fresh garden salad to have with this lovely BBQ fish healthy meal.
